‘Big Jim’ is a legendary New Mexico heirloom chile developed by New Mexico State University in 1975 and known for producing some of the largest peppers in the world. This variety is often harvested as a green chile, a staple of New Mexican cuisine.

The plants produce medium-hot, tapered peppers that are 6–12 inches long with thick, fleshy walls and excellent flavor. Pods are perfect for chile rellenos, grilling, roasting, and stuffing. Each plant can yield 24–40 peppers over a long season.

‘Big Jim’ grows 16–24 inches tall, thrives in full sun, and performs well in garden beds, containers, and greenhouses. It is deer resistant, drought tolerant, and heat tolerant. Harvest begins in 70–100 days.
