Palla Rossa Radicchio is a certified organic live 2-inch starter plant of the classic round Italian chicory — tight ruby-red heads shot through with white veins, firm as a small cabbage and about as heavy in the hand.

Raw, it brings a clean bitter edge that cuts through rich food, which is why it belongs in a winter salad with citrus and something salty. Halved and grilled or roasted, the bitterness turns sweet and almost caramelized. Plant in summer for a fall and winter harvest; cool weather is what colors the heads up and firms them, and frost improves the flavor rather than damaging it.

Fun fact: radicchio is a chicory, not a lettuce — the same species as the blue-flowered roadside plant whose roasted root has stood in for coffee for centuries.
