Flamenco Cauliflower is a certified organic live 3-inch starter plant that grows on to a firm, creamy-white head cradled in a ruff of blue-green leaves. It ships rooted and ready to go straight into a prepared bed.

Cauliflower rewards steadiness more than skill. Give it full sun, soil with real compost worked through it, and water that never quite runs out — a check from drought or heat is what makes a head go loose and grainy instead of tight. It is a cool-season crop, so it does its best work in spring and fall plantings. Leave the outer leaves on as the head fills: they shade the curd and keep the color pale.

Fun fact: a cauliflower head is a flower that stopped. The curd is an arrested inflorescence — thousands of flower buds held just short of opening — which is why it turns coarse and grainy the moment the plant changes its mind and decides to bloom.
