Chieftain Savoy Cabbage is a certified organic live 2-inch starter plant of the handsomest cabbage there is — loose, deeply crinkled blue-green leaves, each one embossed like seersucker, forming a head that feels light for its size.

That crinkle is not decoration. Savoy leaves are thinner and more tender than smooth cabbage, sweeter and far less sulfurous, and they hold sauce the way a flat leaf cannot — which is why they are the ones to use for stuffed cabbage rolls, and why they collapse so well into soup. It is cold hardy, stands through frost, and sweetens as winter comes on.

Grower's note: firmness is the test, not size. Squeeze the head — cut it when it feels solid, and before warm weather or heavy rain can split it.
