Romanesco Broccoli is a certified organic live 3-inch starter plant of the one vegetable people photograph before they cook it. Each head is a cone of smaller cones, spiralling into smaller cones again — a repeating pattern that holds all the way down to the individual bud.

The color runs bright chartreuse in cool weather and softens toward creamy white with a pink cast in heat, so a fall planting shows it best. It is sweeter and nuttier than ordinary broccoli and tender enough to serve raw on a board, though it also roasts well. Give it room — 30 to 36 inches between plants — full sun and steady moisture, and expect heads around 77 days.

Fun fact: the spiral is a genuine approximate fractal — each floret is a scaled copy of the whole head, and the number of spirals winding around it is a Fibonacci number.
