Amethyst in Snow Bachelor's Button opens white, deeply fringed florets around a rich purple eye — one of the crispest bicolors Centaurea montana offers. It arrives as a live 4-inch plant.

The flowers ride above a broad, low mound of gray-green leaves furred with fine silver hairs, so the clump still looks deliberate between flushes. Let it knit across the front of a perennial bed as loose ground cover, run it along a path edge, or plant it where you pass in early summer and can cut a few brush-like stems for a jar on the table. Bees find it fast.

Fun fact: the genus is named for Chiron, the centaur of Greek myth, who was said to have healed a wound with this plant — hence Centaurea.
