Salsa verde pairs well with grilled steak. This recipe is adapted from “Butcher’s Steak With Leafy Greens Salsa Verde” by Alison Roman for the New York Times.
Ingredients
Steak, fully cooked to your liking
2 scallions, finely chopped
2½ cups very finely chopped kale, arugula or other dark leafy green (chop leaves and stems)
1 garlic clove, finely grated
⅓ cup olive oil
Salt and pepper
Directions
- Add the first four ingredients to a medium bowl and season with salt and pepper to taste. Set aside while you’re grilling the steak.
- To serve: Place salsa verde on a plate and arrange steak on top.
