Often referred to as Chinese Cabbage, Pac Choi has dark green leaves with whitish stems. High in Vit. A and C, and often used in stir-fry. It has a crisp, chewy consistency when raw with a sweet, mustard-like taste. When cooked, it becomes tender and the flavor mellows, resembling common cabbage or spinach.
